You are right, but then there is blending, not full clearing of a panel. Similar concerns with single stage paints. I just think finding a great painter is quite difficult so having them do a great job in my opinion is dufficult. Call it distrust.
 
Although I've often posted about how it's worked fine for me, IIRC they geneally don't "blend" or "fog" the clear any more; they clear the whole panel.  Even the one shop I use that never used to do that now shoots the entire panel with clear.
 
Repaints are one of the reasons that I haven't tried coatings.  On the last repair that I had done on my truck, the repair was made to one corner of the hood.  The repair recieved a basecoat blended into the exsiting paint and then the whole hood received clearcoat. Using this process, I wonder how much actual scuffing is done to the whole hood and will the scuffing for sure remove the coating.  Typically when I know that I am going to have paint work done, I remove all the wax/sealant with a solvent prior to taking my vehicle to the shop.  I would hope that the shop scuffs the whole panel before they begin the repair.
 
When I coat a vehicle I make sure the customer understands that, should any body work be done, they need to specifically inform them of the coating and that there may be additional costs if the shop has to do more work to prep.
