First of all, a professional who knows what they are doing wouldn't return the car wet like that.
So, you are dealing with a non-professional. I would take it back to them and demand your money back. The water is doing more damage than you can see, especially if there are any chemicals remaining.
Take that money, and fine a professional with an extractor of at least 100psi and ask them to just get the water out. Very few shops have an interior dryer. If chemicals were left over from the shampoo (which I'm guessing they only used degreaser, which is bad too) you will get an oder soon.
To remove this oder, find a shop with a Ozone Generator. Make sure they are using an enzyme cleaner to remove the smell. These units take 30mins to 5hrs.
