For general defect removal stages using medium polishes and light compounds I will use the ortary at around 1500rpm to work the products (generally Menzerna or Meguiars for me). This I find a perfectly effective speed and maing several passes (sometimes ten or more) gets the job done, then I finish off at about 900rpm with a couple of pases to refine the finish and remove any light hologramming that may have been inflicted...
For more aggressive compounding, I still generally stick to 1500rpm, but have been known to go above 2000rpm for more severe work - I used Power Gloss on a W7006 pad and 2000rpm+ to knock back orange peel effectively, and used slower speed on final passes to refine the finish... Then a finishing polish to remove the light hologramming using the rotary at high speed invariably left.
For finishing polishes, I rarely venture above 1200rpm - no need to.
