Light polishing should remove them.

I feel like there are horror stories of people trying that and the stripes turn out shiny or a different tone altogether?

I'd take a little polish on a MF wrapped around the tip of your finger and do a little test spot in the least visible area you can find. If no negative change to the stripe, then try rubbing out the water spots with it. I've done matte black stripes on a Centennial Edition Vette with Opt Hyper polish using my PC and they cleaned up real nice with no change to the finish, just did a test spot first to check.
