Though perhaps somewhat derailed, the thread and good will still survives. I'm probably as guilty as any for taking it slightly off course, and for that I apologize. But still plenty of time for folks to chime in for their Christmas/New Years and other holiday wishes (I guess Hannukkah has concluded for this year).

That might be tough for you. Last I heard, putting anything other than pork butt in a smoker was a crime in North Carolina.

It is to some. If you are in western NC they prefer ketchup based BBQ sauce and vinegar based in the east.

I lean towards the ketchup base while The Woman, who is from Raleigh, prefers a vinegar base.
There are two great BBQ books by Paul Kirk that have a lot of good information and recipes. I highly recommend them for anyone wanting to learn the art of BBQ. They would make excellent Christmas gifts.
Well, we've got some wet stuff the yesterday and today, but not supposed to freeze until tomorrow evening. It was 65o this a.m., but it is overcast and spitting rain, thunderstorms predicted when the cold front moves in.
