But in real world terms/speeds, marketing that cleaning up the paint will make the car faster would be silly. Aerodynamic drag of uncorrected paint isn't going to make a big enough difference.

Yes.

I won't market my services beyond where they are truly valued though. None of my clients get paint restoration due to fuel incredibly microscopic mpg increases or non-tangible improvements in how long it takes to max out the top speed.

If someone markets a value, it should be easily quantifiable to a client. If extensive explanation is needed, they won't care in my experience.

None of this is to say you're wrong though. I've heard it said that it will improve mpg and aero(which has more of an impact on mpg than acceleration), and it sounds like it makes sense. What I haven't seen is an actual study or experiment that proves it.
