My favorite of your list would be GSP by far.
My favorite of all time would be Frank (not Ken!!) Shamrock back in his title run from 1997-99 (I think). The first fight I ever went to was Frank (Not Ken) Shamrock vs. Tito Ortiz at UFC 22 in Mobile, Alabama. It was a much different sport than today. I think there where maybe 2000 people in attendance, maybe 3000. It is a completely different, although maybe to mainstream affair now.
