At the risk of not being politically correct

I know that, but you're certainly closer to Maine, than I am. :D

When I was flying out of Logan some years back, there was an airport concession that packed up fresh lobster and other seafood right there so you could check it in on your flight.

I lean towards the ketchup base while The Woman, who is from Raleigh, prefers a vinegar base.

There are two great BBQ books by Paul Kirk that have a lot of good information and recipes. I highly recommend them for anyone wanting to learn the art of BBQ. They would make excellent Christmas gifts.

I am definitely prefer the vinegar. Now, some in South Carolina seem to add mustard. I usually get a boston butt and make some BBQ for New Year's Day.

I don't know why but that made me laugh...I guess I'm just giddy with the Christmas spirit. :D I don't even know what a boston butt is. We probably just have Texas butts around here. Since everything is bigger in Texas, why wouldn't you opt for a Texas butt...

OK, I've slapped myself and have regained control....please, please carry on...or don't carry on, but do continue....

From wikipedia:

As a mainstay of Deep South, cuisine particularity in Alabama and Mississippi, it is often smoked and sold as a fundraiser on road side stands by charities and local organizations.

This is more portable, and you can eat the carrier.

That does look pretty darned good.

I'm hungry. Anyone for seafood or BBQ? I think I'm having potato soup for lunch.

I just bought 20 lbs of pork butt last weekend. I figure they'll need about 15 plus hours on the smoker when I get around to cooking them. I eat what I want, the vacuum pack several bags for later consumption.

Happy Festivus Everyone!
