Mi Hermano Miguel !
When I lived those 11 years in the Pacific Northwest and Detailed at least 100+ convertibles, the best product I found was this -- https://www.autopia-carcare.com/fabric-convertible-top-kit.html#.XGjgMqKQH3g
To really clean a lot of mildew, etc., out of some of those tops, I finally found that first, pressure washing the convertible top, then spraying the Cleaner and brushing it in, then pressure washing it all off, then using my Mytee Extractor to rinse and extract it again, I got really clean, perfect, color results..
Then dry it,, spray the conditioner over it a couple of times, and wow - it was brand new again and shed water for months or longer, depending on how the Client took care of the car..
As far as fabric protection, I don`t use anything for fear of putting chemicals in contact with little children, etc., who as we all know, like to lick and taste everything at a certain age..

rlmccarty2000- How does the 303 Fabric Protectant "die off"? Cleanly? Any issues with reapplication?
Any issues with these fabric protectants causing off gassing on interior glass?
It always wore very evenly. I would normally reapply every three months whether it really needed it or not. There was never any “build up” or any sign there was any product on the fabric... 303 goes on cleaner.
