I think I like the final wipedown the best, it's when I can go over everything and make sure I didn't miss anything and than everything is as good as it can be. Plus, that's the step when I know I'm done! Otherwise my fav would be the trim and little details that can make all the difference between a really nice clean looking vehicle and an absolutely immaculate vehicle (when the judges get impressed my job is done!).
On my own truck I like to do a full detail about twice a year for the exterior, depending on the need. The interior gets treatment whenever it's needed so I don't have to do a ton of work all at once at any given time.
