What's your favorite casserole recipe?

Hello everyone! Being in college, although I am a great cook, I don't always have time to eat nice meals. Sure PB+J's are nice, but 5 nights a week? I don't think so. I was wondering if anyone has a favorite casserole (called hotdish in the midwest) or easy college meal recipes to share. I have an apartment and kitchen FYI.

Here's a great one.



Stuffing Pot Pie Dish



6 chicken breasts

1 bag frozen mixed vegetables

6 serving amount of Stove Top Stuffing for Chicken

2 cans Campbell's Cream of Chicken and Mushroom Soup



Preheat oven to 350*



Layer the chicken breasts in a large baking dish. Make the stuffing mix on top of the stove, according to directions. Mix the 2 cans of soup and the bag of vegetables in with the stuffing and spoon it on top of the chicken breasts. Bake for 1 hour.
 
Oooh man, I second that one Mosca! My wife makes that (but without the veggies) and I LOVE it!! Sorry Greg, I don't know the exact recipe, but another good one is green beans mixed together, mashed potatoes on top, and then cheese on top of the potatoes, and baked. I'm not even sure what it's called. I think it may have soup mixed in there with the meat and beans.
 
"Mexican" Casserole



1.5 lb. ground beef

1 medium onion, diced

1 clove garlic, minced

1 4 oz can chopped mild green chiles

1 14 oz can chopped tomatoes

1 16 oz can Enchilada Sauce

1 can Campbells cream of celery soup

1.5 tsp Lawrey's Seasoned Salt

8 oz grated cheese, 1/2 cheddar, 1/2 Monterey Jack

8-10 large tortillas, torn into large pieces



Preheat oven to 350 degrees F.



Brown meat w/onion and garlic; drain off excess juice and fat

Add seasoned salt and canned ingredients.



Place a layer of tortillas at bottom of 13X9X2 pan. Add a layer of meat mixture, top w/some of the cheese, then another layer of tortillas, meat mixture, and cheese. Like you would do a lasagna.



Bake at 350 for 35 minutes. Cut like lasagna & serve
