Basically, claying removes surface contaminents from your paint (stuff you can feel by rubbing your hand lightly over the paint). "Cleaning" your paint is the same as polishing; you're removing oxidation, swirl marks, stains, etc. Some polishes/paint cleaners use a chemical action to dissolve crud and improve the finish while other polishes use a mechanical action (abrasive) to do the same thing.
