Depending on what you've got, there are a few different techniques/processes to be mindful of. If your leater is "coated" (as I suspect) you can easily use any of the products mentioned here to condition it. For uncoated leather, however, you'll need to treat it slightly different.
As I said though, it depends on what kind of vehicle you're dealing with.
