How to remove chalky residue from old rubber trim ?

The plastizers, some of the carbon black in the parts and the release agents (usually waxes of a special composition) are gone, say "bye-bye".
Just take some rubbing alcohol, 70% etc and clean the parts, look at the towel, it will be black.
What ever you chose to apply after all, as a dressing, will not stay there for long, it's a "dressing", not a "coating", so it is going to go away in a short time.
Each vehicle manufacturer sources such trim and other parts from outside vendors, so each brand and model may have different quality of rubber and other trim pieces, no way to tell you what is right, since you didn't give us a clue about the manufactuer of the vehicle, it's age, etc.

OPC & toothbrush. I find that works on the rubber electrical sleeves that always seem to turn white.

I've had good success with 1Z Gummi Pflege. It's not miracle worker but its effect lasts about 2-3 months. Each application tends to improve the effect, the whitening isn't so pronounced anymore.

Clean using Iz einszett 'Plastik-Reiniger' an intensive, non-corrosive, non-acidic two-phase deep cleaner for that removes wax, sealant and oxidation build-up thoroughly and effortlessly, these chemicals restore the original texture, tactile feel and resiliency
Once the residue has been removed apply 1z einszett Vinyl Rubber Care & Potectant "Tiefenpfleger” on clean or pre-cleaned vinyl or rubber, it provides a temperature-resistant seal and a low-shine matte finish Dust-resistant and retards the fading effects of UV rays to keep exterior ‘rubber’ and vinyl looking like new.

Yeah, same here. I do kinda prefer the Wurth version, but it's a *LOT* more expensive. The Wurth Rubber Care aerosol is good too, but you might want to spray it on a swab/applicator instead of risking overspray (not that it's really slimy stuff or anything, surprisingly clean IMO).
I like to prep the rubber with, well...Griot's Rubber Prep. If things are really nasty I'll use the IPA first just because it's cheaper, and then follow up with the Griot's before using 1Z/Wurth.

Accumulator: what makes you prefer Wurth to 1Z? Is it a better performer or just personal preference?
The Griot's Rubber Prep sounds interesting, but I can't stop to wonder if it's solvent based?!

When I did a side-by-side the Wurth dried a bit "cleaner" as in, "less slimy". MAYBE performed a bit better too, but I might've just uhm...seen what I wanted to see. I cared about the "less slimy" because it was on a vehicle (WRX) where the glass pressed against the rubber and I didn't want the treatment transferring to the glass. The Wurth did less of that transferring than the 1Z.
And the Wurth aerosol can be *really* handy in situations where overspray isn't an issue.
Eh, I use both of 'em, either is OK. And they've brought back some really bad trim on neglected beaters that'd spent a lot of time in the sun.
I absolutely, positively *LOVE* the Griot's Rubber Prep. I use it on exterior plastics, rubber, tires. ZERO negative experiences with it. It's one product that simply astounded me, never expected much when I first ordered it but now I'll never be without it.
