Cooking at Higher altitudes

Well, I'm use to cooking down here at 6 feet below sea level but I'm going on a trip to colorado for a family reunion. They know I cook and I'm probably going to be having to do some meals. Mostly just for my close family (5-9 people) but maybe one or two dinners of 40 people. It's suppose to be a fully preped professional kitchen so 40 ppl shouldn't be too hard.



Plan on doing some of the stuff I'm good at. i.e. cheesecake, filet minion, eggs benedict, maybe some chicken dish, etc. Trying to think up a nice New Orleans style meal too. Wouldn't mind wiping out a few relatives with an extra spicy dish :chuckle: Probably bust out some bread as well but I haven't done that in awhile.



What's this altitude going to do though? It's going to be up high in the rockies. Mainly worried about my cheesecake and if I decide to do bread because it's so much work to get to the end and have it not be what it's suppose to do.

Reading the 1st one now and worried about even attempting cheesecake and bread right now. lol -6ft to 9k ft is going to make a big difference it seems. lol
 
I always thought it was weird that high altitudes had different directions. There are so many interesting things on this planet (even if they are trivial).
 
Glad to help. The second link had some recipes. Were you able to find any bread or cheese cake recipes?

Perfect cheese cake and awesome bread are never trivial :)

Altitude changes boil temp. I see that as one of the major differences.

I got the perfect cheese cake recipe. If they have the pans I need, then I'm going to give it a try. Hope it comes out



Didn't look up any bread though, might go do that now but I need some sleep. I have an 8:30am flight and it's 2am right now. lol



Right now I'm planning on winging some type of pasta dish, Seared Filet minion (or some other cut) stuffed with blue cheese, and Eggs Benedict. Maybe wing some french toast and pancakes for breakfast one day... Everyone loves those! Guess a fruit pizza would be a good breakfast item I could make the night before.



Also plan on pumping out a large batch of my chocolate chunk cookies. One of the best tips I've gotten off the food network. Buy your chocolate in bars and cut it up instead of buying chocolate chips!
