When I am moving down the highway my truck wants to cut out on me. It is noticable just when maintaining speed but gets worse when I step on the accelerator. It is not evident when I am idling. I have changed the gas filter, spark plugs, wires, and I ohm'd the injectors with a meter and they were all comparable, though I am not sure if that means anything. The truck has over 100000 miles.

I would go and purchase a $12 Chiltons or Haynes manual at your local auto parts store. They are usually pretty good with trouble shooting.
 
legend i have 302 in my mustang, and i have been working on the all mighty 5.0s for a while, well my short 21 years haha, id say check the distributor, fuel pump,fuel filter
 
Could even be a restricted catalytic convertor.
Could be so many things that it is very difficult for a DIY solution.
With the advent of all the electronics, I have about given up diagnosing and fixing anything but the most basic problems.

We once worked on a Chevy V-8 for 3 weeks before taking it to the repair shop. They hooked up their multi thousand dollar diagnostic machine and found the problem in 2 minutes, fixed it in 10. It was the ASC (Automatic Spark Controller). I didn't even know what it was let alone what it wasn't doing correctly.

Sometimes you are better off going to someone with the right equipment to find your problem.

Are you getting a check engine warning light / If so you can take it to your local Autozone and they check the troublecodes for you and tell you exactly whats faulting / I have relied on them for 3 other repairs (O2 sensor, EGR Valve, Mass Airflow Sensor) all different vehicles, and they were right each time.

Thanks for the reply elortt. For 97' and up autozone can check the codes because all vehicles have a generic diagnostic plug but my mean machine is a little too old. Thanks.
I did get a web site from another forum that will help a lot and I am going to try and get the codes myself per the instructions. It looks pretty simple even for me.
