Check out Auto fetish detailing on YouTube. One of his videos is about his detailing van

Can you devise some kind of rolling platform for the floor and sides. Like shelves to slide out with the back doors open and or a stationary platform for your detailing arsenal. Just throwing out ideas

Think of it this way. If I am in a serious accident or have some weird panic stops, if the vehicle rolls over what do I want to get hit with or rolled over by in the Drivers or Passenger seat. Let that be your guide.

Yes you want to secure everything thing down. It will become a projectile if you get hit or have to stop.

All storage needs to be bolted down. All the gallon and 5 gallon bottles should have a strap or guard across them.

The other option is a metal partition between the front seats and the cargo area.
