I`d go coating. The durability and lifespan of it will be much longer than a sealant. You will still have to properly maintain it however.

Have used both; the best coating you can afford, applied perfectly, only after proper paint preparation, will always outlast the best sealant..
Is this vehicle going to sit outside its entire life ? What is your idea of maintaining the paintwork of this vehicle going forward ?

Ceramic all the way it’s a noticeable difference. Sealants performance drops off quickly but ceramics sold here are usually solid for 12-18 months and performance does not drop off as noticeable as sealants/wax
I try to avoid coatings whenever possible. Their marketing has made them seem invincible, but other than the McKees spray coating and Garry Dean`s car show dream cream, every one I`ve tried eventually turns into a mess of water spots. If someone really wants one then I`ll do it, but only one of those two. For anything else, the spray and rinse coatings (hydro2, hydro blue, nanoskin, etc) are hard to beat. They work well, last a while but in my experience don`t have the water spot issues.
While I don`t live near an ocean, my vehicles do face constant sun, rain, snow, ice, road salt, bugs, bird droppings, etc. All of them are daily driven. Hands down, coatings have been the best option. My coated cars are far easier to clean and maintain and protected longer (3~4x longer) than any sealant I`ve used, do I don`t have to do a full detail nearly as often.
If I lived someplace with a mild climate and had plenty of time on my hands, I`d probably still be waxing my cars. However, neither is the case, so I`ll always go with a coating.

Coating... but dont feel bad if you end up with a sealant. Or use a ceramic sealant on top of the coating if giant seagull poo is a problem that close to the ocean. The extra protection on top may help prevent etching.

Are you DIYing this or having the Coating/etc. done by a Pro?
I`m all about Sealants rather than Coatings, but a big part of that is picking what I`m confident I can do 100% OK by myself.
(Just a FWIW, Fk1000P protected my car *FINE* against those "Seagulls from Hell"-bombs. A few bottles of water rinsed it off well enough to look OK for the rest of the trip and I`ve still *never* experienced any etching on anything wearing that LSP even when I left bird/bug stuff on there for months...yes, months.)
The above is not intended as a slam on coatings...just sayin` `)
