SS is a very hard metal but I would imagine it would work. Ive never had to polish SS so I can thelp you that much, sorry
Generally, yeah you can *IME* (that *IME* is a disclaimer, so be careful).
Steel is harder than aluminum. I`ve tried to remove scratches from the Jag`s stainless steel windshield surround with aluminum polish, and it didn`t fix it. Cleaned it up nice though. I`ve had the same experience on stainless exhausts.
When my builder used a PC to polish scratches out of a stainless steel vanity top (garage bathroom) he used some *really* abrasive stuff that woulda chewed up aluminum something awful.
But I wouldn`t assume that just because nothing terrible happened for *me* that you`re absolutely safe, so try an inconspicuous area first.
