I was wondering if Trim Restore is more of a restorer or a protector because i was comparing it to 303 Aerospace Protectant. I know that 303 is marketed more as a protectant, but which one is the better product generally?

Protectant I`d guess, it seems to last longer than most water-based products, as it is solvent-based. I`ve seen durability in the range of months, compared to the days or weeks of most water-based dressings. I`ve never used 303, so I couldn`t tell ya how long it lasts. TR destroys Natural Look for exterior durability, can`t say much more than that as far as comparisons go.

I haven`t yet sampled 303 , but I can tell you as a regular TR user that it protects VERY well.
Months even on outer trim.
However it does work best on grained trim. It doesn`t seem to absorb into rubber seals or flat trim as well as some others.
For grained trim , though , you`d be hard pressed to beat it.
As per your original question : it does both pretty well.
