I just purchased 2x250 and i find it not bright enough so i was wondering if a single 500w actually shows more compared to a 250 ?

Yes a 500w light will always be brighter than two 250w`s. Even though two 250w lights consume the same amount of power as a single 500w, the 500w light will be brighter because the light output is in a higher temperature scale.

e.g. Having to two lights that put out 50 lumens each and throws a beam up to 100 feet does not give you 100 lumens of light and 200ft of throw. Each light is limited to the amount of light it can put out.

you will see more defined defects with a single 500w, but another option is just to turn off a couple lights when youre using the 250s to map things out. When Im analyzing paint I always close the garage door so it`s just me and the halogens, always makes things easier.
