I`m using Pinnacle wax as my LSP after polishing and glaze have been applied. Is one coat adequate or should I go with two?

2 coats is fine..it ensures you get complete coverage on the paint...

What Al said. I`d wait until after you wash the car next to add another coat. You might even want to add a third coat the time you wash your car after that. More carnuaba gives an increase appearance of depth due to slightly distorting the surface.
Going into winter, I do that for the next 3-4 times (wax after washing) I wash my car after polishing and waxing in late October/early November. Never fails to last all winter, even this year when we had actual snow and above normal rain.
