David - nice camera!
I shot in HD on a Canon HV10, then edited in iMovie HD before saving as a H.264 QT Movie.
The HD quality is more than enough to produce DVD's etc from, so is a little overkill for the web, but the resolution is nice when you're trying to show detail such as beading water.
Make sure you use the Sony HD mini DV tapes, as they do make a difference and are worth the extra $$$.
You probably want to look at getting the wide angle lens for your camera when shooting around cars:

Most video cameras have excellent zoom, but poor wide angle capabilities, so a wide angle adapter will give you greater flexibility when shooting detailing work.
And get a big heavy tripod if you don't have one already
