wagnergear- You probably alread know more than you think

Between all the threads here and the stuff you can learn from the "learn" icon on the Atuopia home page, there isn't much that hasn't been covered and this stuff isn't all *that* complicated. Apply common sense, remember the stuff you've read here, and it oughta go fine.
Just get the PC (or a Cyclo) and an assortment of pads (orange/yellow for major correction, a few polishing pads, maybe a finishing pad or two) and start getting experience. I always recommend 1z brand polishes for people just starting out, very user-friendly and good results too. Top with a long-lasting "heavy" wax like Collinite and there you go.
But I'd practice on the newer car if the '70's paint is in remotely decent condition. Original paint cars from that era are pieces of history
