We want to get him something nice for his birthday, but he's one of those who usually buys everything he wants...leaving us stumped. He has a lot of interests - mountain biking, climbing, sports cars, pens, watches, cooking/grilling, weights/fitness, guns, etc. He usually has very nice taste in all of those things.
Does anyone have any ideas for a nice ($250-$500) gift that's hopefully somewhat unique/meaningful?

I took my brother out paintballing for his 30th this year and we had a great time.
+1 on the racing school day. I took a Skip Barber course here in WI and is still one of the best opportunities I have ever had and would do it again in a heartbeat.

My uncle went to one (can't remember off the top of my head) for a shoot weekend and he had a ball.

Al | We do have a great meat market here that he loves. I may have to come back to that.
Thanks, guys.
