Project Cars?

Is it worth it to buy an old car and fix it up and sell it? I want to buy an early 90's 240sx, 300zx, or integra and restore it.

If you mean doing it for a profit, I wouldn't expect to get much money for your sweat-equity. Some pros can do this and make money at it, but they have skills that most people lack and they pick the candidate cares *very* carefully.

The type of cars you seem to be considering (and FWIW I'm a big fan of certain '80s-early '90s cars) aren't really worth all that much, except for the rare stuff and untouched original ones that have *not* been restored. Heh heh, my 18K mile '85 Jag and 24K mile '84 RX-7 GSL-SE aren't worth pocket change and both are somewhat special cars as vehicles of that vintage go. The sad truth is that they're just used cars.

Now a BMW M1 or a Buick GNX, or something else that collectors go nuts over, that'd be different. But even those are really only coveted when they'r original/unrestored.

Eh, you gotta go back farther than that for making any money. If you're doing it for personal reasons go ahead, parts are readily available for the cars that you want. My 1987 300ZX Turbo even if it was in perfect condition being a fully loaded and having just a few miles on it wouldn't bring much money. So I just decided to build it how I liked it and went all out on the motor ripped out the interior and made it race ready.

The 240sx and the Integra would be the easiest to work with. The 300zx (1990+) are a pain in the butt to work on and you need to pull the engine to do any work to the turbos. I had a 96' 240sx and put an SR20DET in it and loved every minute of it. I had NO problems with it (the stock KA or the SR). The only problem was my water pump went out due to a shop incorrectly installing a coolant line in the block (on the SR20). I even put my 240 through 60+ drifting runs (20-25 by me and 30+ by a Formula D driver that used my car as a practice car due to the same suspension as his car) and had no problems.

If you want to make money though go for the 300zx. If you find a wrecked 300zx turbo and bring it back to PERFECT condition. It might make some money. Other than that try old nissan/datsun 280z or 240z.

A really good looking 300zx 90 and above should bring in 9K-18K depending on miles. Why? I dunno...... I'd rather invest that 18K in a down payment for a turboed 350

I have a 93 Mazda Miata (NA chassis code). Had been doing research on them for over a year, and realized that they are slowly going up in value. They're fun, cheap cars, and IMO will eventually become classic collectibles. Other motor heads have agreed, but just my 2cents.
If I were you, I'd stay away from the 300zx, as that was one of my candidates, since i've heard they are a BI*** to work on. there's no room under the hood!
Also, the cars you listed, the z car is probably the best candidate, because it is a NICHE car. meaning that, like mustangs, corvettes, miatas, and i'd like to include Aston Martins etc., they have a following of particular people. The integra and 240's... they are like civics. everyone and their moms have them now, thanks to fast and furious movies. not particularly good cars to flip. you'll never get your money back.
