Concentrate on a small area 2x2 foot section, and do slow overlapping passes front to back then left to right (like a checkerboard pattern). Speeds setting of 5-6 with the PC for paint correction.

If the paint is rough after claying, you may benefit a stronger clay since it sounds like contaminants may still be present. Was the Meguiars clay the agressive one? It won't screw anything up if you polish and wax on a surface that isn't completely smooth, but you won't get the best results possible.
It would be best if we could see some pictures to get a better idea of the paint finish. The uniform pitted texture, this may be orange peel.
For polishing out swirl and scratches, you really do need a machine to get results.

For best results you should polish and refine the finish with SSR1 after using SSR2.

If i use the Dodo Juice Supernatural Wax Machine Stick after the Wolfgang Deep Gloss 3.0 will it make a very noticeable difference or do i not really need to use both of those.

Using a wax after a sealant is always optional. Wolfgang Deep Gloss Sealant 3.0 provides excellent paint protection and durability with slickness and great looks. Adding a premium carnauba wax on top can add even more depth and richness as well. If you have a dark color vehicle, the difference can be more noticeable. Wolfgang DGPS has depth and character, not a sterile shine shine. Adding a carnauba can enhance that look.

2003 Audi A4 Quattro. I'm trying to do a basic clean of the DASHBOARD, the DOORS and STEERING WHEEL to remove the grime that has been building up over the years. What is the best types of products to use in order to remove the dirt, and add some shine without getting that slick-to-the-touch greasy feel?
Listing some literal products would be GREAT so I can get some instead of trying to guess at "Would this be considered a soap or a detergent?" "Is the strength of this solution too strong?" etc.

Also, I should mention that this car has leather. All the seats are leather, but I do not know if this also pertains to the doors.
