Steve, a couple of thoughts. You can always have a professional handle the recovery phase. I've seen some amazing work done on old leather that made it look nearly new again.
I am not familiar with the products in your link. I am familiar with:
http://www.leatherique.com/Jaguar_leather_Care.htm He's got a very good reputation. Have a look at his "before" and "after" fotos.
Being in the UK, I cannot imagine you would have any issues locating somebody that could hangle proper restoration, if you decide it's that important.
