How many layers can you apply before it becomes overkill?

And most importantly... what speeds do I work it with? (right now I spread it at speed 2 and 'melt' it in at 3-3.5) Do I need to put in more passes and up the speed like a polish? (I guess the last question is more about 'working' glazes in general.)
2 layers would be enough to ensure even and adequate coverage. Speed settings may vary from product to product so it would be best to follow manufacturers directions on the label to get the best results.

We have videos that show XMT Carnauba Finishing Glaze in use, just click on Light Swirl Removal or Intermediate Swirl Removal to watch the videos here in our Dual Action Polishing Guide
